Ladybug and Spider Salad

Ingredients:

4 cups baby spinach leaves (1L)

1/3 English cucumber, sliced into half moons (75ml)

1/2 cup grated carrot (125ml)

4 radishes, sliced (4)

1 celery stalk, sliced (1)

3 Roma tomatoes, cut in half lengthwise

4 mini potatoes

2 tbsp olive paste (30ml)

6 fresh chives, cut 2-inches long

2 fresh chives, cut 1-inch long

 

Directions:

Cook potatoes in salted water until tender, about 15 minutes.

Place spinach on a platter. Top with cucumber, carrot, radishes and celery, reserving tomato halves, mini potatoes, chives and olive paste.

Assemble ladybugs and spiders.......

For Ladybugs: Each child gets 1 halved tomato. Pipe olive paste onto the tomato halves to resemble dots. Using a toothpick, cut two holes at one end of each tomato half. Insert a chive into each hole for antennae. Repeat with remaining tomatoes.

For Potato Spiders:Cut potatoes in half. Each child gets two halves. Using a toothpick, cut six holes for spider legs and insert chives - bend into shape. Use olive paste for eyes. Repeat with remaining potatoes.

Top with your favorite healthy low-fat dressing!
