This recipe is from “Healthy Kids, Smart Kids” by Yvonne Sanders-Butler, Ed.D. She’s a Principal at a school in Georgia. She turned her whole school into a healthy eating school because she loves her kids so much. So we are sharing one of her recipes with you. This is a recipe you want to make with your one of your parents helping you. Licking your plate afterwards is allowed!
- 1 Tablespoon flour
- 1 stick soy margarine, softened
- ½ cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all purpose flour
- 2 teaspoons baking powder
- ½ cup soy milk
- 1 cup natural or organic jelly
Preheat oven to 350 degrees. Spray 9” cast-iron skillet with Pam or canola oil spray. Dust with the 1 Tablespoon flour and set aside.
In a medium bowl, “cream” the soy margarine and sugar with an electric mixer. (That means mix it real fast til it looks creamy.) Then, with the mixer set to medium speed, blend the eggs one at a time into the margarine mixture. Add vanilla extract and keep beating until it’s all mixed up or “blended."
In another medium bowl, stir together the flour and baking powder. Now add the flour mixture and soy milk to the batter. Keep switching between adding the flour and then the soy milk to the batter. End with adding the flour.
Pour everything into the skillet. Put the skillet in the pre-heated oven to bake for 30 minutes.
While you’re waiting, go run around the block one time with your Mom or Dad. Or run around the house three times.
OK, when it’s 30 minutes, have Mom or Dad take it out from the oven and put it on a wire rack to cool it off some.
Then turn the cake out onto a cake plate. Let Mom or Dad gently cut the cake horizontally. Sometimes they can do this with a thread! Spread half of the jelly on the bottom half of the cake. Carefully set the top half on the bottom layer. Spread remaining jelly over top of the cake.
This is like a jelly doughnut…but better for you!
