This recipe is great for the summer, especially on days like this when it is SOOOO hot out there!
INGREDIENTS:
- Blueberries (1 carton)
- Strawberries (1 carton) - Don't forget to take off the stems!
- 1/2 cup brown sugar
- 2-1/2 cups vanilla soy milk OR 2-1/2 cups low- or no-fat milk with 1 teaspoon vanilla extract
DIRECTIONS:
- Mix together berries and brown sugar in a blender until creamy. You could also do this by hand with a potato masher; it will take a long time and give your arms a good workout!
- Stir in the liquid until well blended.
- Pour mixture into paper cups and place in freezer.
- After about 30 minutes, insert wooden stick into the center of each cup.
- Freeze until firm: 3-4 hours
